Black Chewy Lunchbox Bars

Took inspiration from Whole Pantry App

Ingredients

75 grams coconut flake (desiccated coconut)
80 grams pepitas (pumpkin seed)
80 grams sunflower seeds
70 grams poppy seeds
80 grams black sesame seeds (If you don’t have black just use normal sesame seeds)
2 tablespoons black chia seeds
50 grams cranberries
2 teaspoons cinnamon
2 teaspoons vanilla extract
1 teaspoon salt
2 tablespoons melted coconut oil
120 ml honey

Method:

Preheat oven to 170C. In a bowl mix all ingredients thoroughly. Place the mixture in a 30x20cm baking dish with baking paper. With the back of a spoon press mixture down firmly. Bake for 20 minutes, or until golden brown. Remove from oven and leave to cool. Cut into your preference of sized bars and store in a covered container.
