1 1/2 cups of quinoa (black /red/white quinoa)
3 cups of water
2-3 cucumbers sliced thinly.
½ sliced cabbage – red or white.
Lettuce leaves ( I used cos lettuce)
1 grated/sliced carrot
Black and white sesame seeds, toastedHommus (Dip of your choice)
Protein of your choice: tuna, chicken breast, lean meat or egg. (optional)
Method: For the Quinoa
Cook the quinoa according to the packet and allow to cool fully. Cut up your veggies into long strips. If you are not familiar with rolling sushi i suggest to watch a little demo clip … thats what i did! Place a thin layer of dip on the bottom of 90% of the Nori roll (except a little strip on the close and far end). Pat down the cooked quinoa onto the dip and layer veggies in a horizontal line close to you and roll the sushi up and enjoy! I like to dip it in some tamari or soy sauce.
