Orange and coconut hot cakes

Here’s a great recipe from Amy Crawford


Makes 3 hot cakes


3 tbsp almond meal
1 egg, whisked
½ banana, fresh or frozen
1 tbsp coconut flakes or desiccated
Finely grated orange rind, I used ¾ of an orange
½ teaspoon vanilla powder, or vanilla essence


In a blender mix all the ingredients together. Then, in a frying pan add a teaspoon of coconut oil to avoid the hot cakes sticking to the pan. Plop 3 hot cakes into your pan and let sit for about 2-3 minutes or until golden. Flip over and leave for another couple of minutes.

Optional toppings:

A dollop of Greek yoghurt.
An orange thinly sliced
A banana finely chopped
Coconut chips
