Muesli cookies

Makes 20

Ingredients:

1/2 cup ground flaxseed
2 cups almond meal
1/2 cup pumpkin seed
½ cup sunflower seeds
1/2 cup dried cranberries
1/2 cup melted coconut oil
1/2 cup honey
1 teaspoon vanilla essence

Method:

Preheat oven to 150 C. Combine flaxseeds, almond meal, pumpkin seed, sunflower seeds and cranberries.
 Add in the melted coconut oil and honey. 
Mix through until combined. 
Divide into 20 balls and place onto a baking tray lined with baking paper then flatten slightly using the back of a fork.
 Bake for 15-20 minutes until golden. Allow to cool.
